Raw Vegan Cream of Coconut Soup Recipe

soup2This is one of Storm’s newest creations…

Ingredients for Base

– 1 coconut, both the coconut water and the coconut meat.

– 1 avocado

– 1 and a half cups cashews or macadamia nuts

Р1/4th cup nutritional  yeast

– 1 teaspoon Celtic sea salt

– 2 cloves garlic

– 1/4th cup olive oil

– 1 lemon

– your favorite herbs (optional)

(See additional ingredients below)

Directions

– Blend all above together in Vitamix (Add enough water to fill to the top of blender).

– Pour into serving bowl and stir in these Ingredients:

1/4th finely chopped red onion

1 bunch cilantro finely chopped

1/2 cup wakame seaweed

Serve with Kale Chips on top (1 pack)

OR, as in this picture, 1 a cup shelled snow peas

– Serves 4

    This looks really nice, but isn’t it a bit high in fat or doesn’t it really matter as long as it’s from good sources? I’m only asking because I tend to feel the same ‘fat feeling’ from these fats, like back when I was consuming meat, fish and dairy (Vegan now for almost a month, and I feel great!)

      Hi Barbara, I saw your post on Fred Patenaude’s blog, talking about B12. You mentioned that you had low B12 and also brittle nails. I thought I’d see if I could make contact with you, because I have an idea that I think you might be interested in.
