New Raw Recipe ~ Jinjee’s Raw Pizza Extravaganza

The Raw Pizza Extravaganza (non-dehydrated raw pizza) takes about 30 to 40 minutes to prepare but is well worth it! I have to tell you this pizza trumps any cooked pizza out there! This is what cooked pizza is TRYING to taste like! :)

My family asks me to make this 2 or 3 times a week!

prep-time: 30-40 minutes

INGREDIENTS

Crust:
1 cup cashews
pinch Celtic sea salt (or salt to taste)
1/2 cup fresh basil

 

Tomato Sauce:

1 cup sundried tomatoes (the kind you buy in a jar of olive oil. Otherwise, soak regular sundried tomatoes in water until soft, about 1-2 hours. Longer is fine if you want to soak them overnight for instance)
1 tbsp. honey

 

Cheese:
1 cup cashews, soaked 6-12 hours preferably
Juice of 1/2 lemon
pinch Celtic sea salt (or salt to taste)
1/2 cup fresh basil
1 clove garlic, with core of clove removed
1 tbsp water

 

Toppings:
1/2 cup cilantro, chopped finely
1 tbsp black olives, seed removed, chopped finely
1 yellow tomato, cubed
1/2 red bell pepper, finely chopped
1 stick celery, thinly sliced
1/2 cup button mushrooms, thinly sliced

 

Marinade:
1/2 lemon, juiced
tbsp olive oil
tbsp water
pinch salt
tsp honey (optional)

 

 

DIRECTIONS

 

1. To Marinate Toppings
- Mix all toppings in bowl
- Add marinade ingredients
- Allow mixture to marinate while you prepare the rest of the pizza. (Start the marinade earlier in the day for a softer toppping mixture. For a really soft topping you can put the marinade in a glass bowl with glass lid outside in the sun for 1 to several hours)

 

2. For Crust
- Blend cup cashews into powder
- Blend in basil and salt
- Remove from blender, complete mixing with hands if necessary, and press mixture down into a round crust on plate. It will be a fairly thin crust. After shaping and pressing down (kids love doing this part), use a spatchula to loosen the crust from the bottom of the plate

 

3. For Tomato Sauce
- Blend both ingredients together until smooth sauce
- Pour sauce on to pizza crust and smooth out until it covers crust evenly
 

4. For Cheese
- Blend all ingredients until creamy sauce
- Pour cheese over tomato sauce and smooth out evenly
 

5. Add Toppings
- Pour toppings on to top of pizza
 

 

Slice, serve and enjoy!

    Hi Jinje :) I am interested in doing one of your programs, I have been transitioning to raw over the past 3 years, and I have hit a wall. I run a herbal and raw health business, and I am trying to help people gain the benifits of a healthy raw lifestyle. I was doing really well raw for quite some time, then I began binging and I cant seem to get back on track. I began my business when I was doing fantastic :) and now I have put everything on hold until “I can be what I advocate”. I dont believe the world needs another fake, and I feel that is what I was becomming. I was preaching one thing and heading in the other direction. I really want to be the best I can be, and I want to help others be the best they can be, but I feel like im drowing in my own addictions and they are too powerful to turn my back on somtimes. I know I just need to be held accountable to someone for a period of time…bring back my old healthy habits and turn my back on my demons, and I am hoping that you will be able to help me get back there. I live in Australia, so I hope we can still be in touch and I am still able to do your program. Thanks so much for all your inspiration, over the past 3 years.

    This looks really good. Does the crust actually stick together!! I still use a recipe I got from you a long time ago for a kale salad. It is an easy go to when I have kale on hand. Its the one where you massage the kale with salt and lemon juice and then add cumin.

    will this hold up and be good for leftovers? i can’t imagine that you would ever know because i’ll bet it gets happily devoured right away in your home, but i’m just a single and while tempted to eat it in one sitting – it would be best to divide it up amongst a couple of meals.

    Sorry to be so dense…with the crust…by adding fresh basil not dried, will that be enough moisture added to the powdered cashews to make a crust? So if you only had the dried basil, one would need to add a bit of water?

    I made this pizza for my 2 teens this weekend. The prep was easy. Presoaked nuts and sundried tomatoes, and marinated toppings ahead of time. The crust held together very well – no prob at all! My kids are BEGGING me to make this again! This pizza is superb!!!! Make it! Make it! You will be pleasantly surprised! My kids told me better than any pizza in box or food chain. Incidently my hub had R.Baron that night also and it didnt compare at all! This will def become a staple in our house. Jinjee is a GENUIUS!!! I’ve been looking for raw GREAT pizza for a long time. I hope she will share more recipes! Thanks a million!
